


Zucchini Fries
Crispy, cheesy, and oven-baked to golden perfection, these Zucchini Fries are a lighter twist on a favorite snack. Coated in a savory mix of panko, parmesan, and seasoning, each fry bakes up crunchy on the outside and tender inside. Zucchini Fries

Ingredients
3 medium zucchini
1/2 cup panko breadcrumbs
1/4 cup all purpose flour
1/4 cup parmesan cheese, grated
1/2 tsp salt
1/4 tsp ground black pepper
1/2 cup Egg Beaters® Original (2 large eggs)
Directions
- Preheat the oven to 425° F. Line a rimmed baking sheet with parchment paper.
- Cut the ends off the zucchini, and then cut them in half. Split the halves lengthwise. Cut into sticks that are 1/2 inch wide. Place zucchini sticks on paper towels, and press to dry.
- Set out two shallow bowls. In one bowl, combine the panko, flour, parmesan, salt and pepper. In another bowl, beat the eggs until foamy. Working in batches, dip the zucchini sticks into the eggs. Then, add them to the panko mixture. Press into the panko, and coat on all sides. Transfer the zucchini to the baking sheet.
- Spray the zucchini with cooking spray. Place in the oven. Cook for 20 to 25 minutes until the coating is crisp and golden. Rotate the pan after 10 to 12 minutes. Serve the zucchini fries with tzatziki or your favorite sauce.
